How tricky would it be to transfer all of my users' active mail files from a Domino server to a SAN?

Not that big of an issue if the SAN array is configured to be accessed as a "drive" by the server it's connected to.
Be aware that you cannot share files, though, in the same way as you might do with productivity software (word processor, spreadsheet, etc). Domino is not peer-to-peer; therefore, this SAN segment should ONLY be accessed by the one Domino server.
To move the files (let's say the server sees the SAN as "E:\" drive), create a folder on E: called Domino (i.e., E:\Domino\), shut down the Domino server, move the Mail directory from underneath the Domino data root to this folder (so it becomes E:\Domino\Mail) and create a directory pointer in the Domino data directory that points to this new path.
That is:
- Create a text file in the data root
- In the text file, put ONE line "E:\Domino\Mail" (without the quotes)
- Rename the text file mail.dir
- Restart the Domino server
The Domino server will read this pointer as a directory as though its contents were still within the data root.
